Cooking with Spring Asparagus
One of my favourite ways to cook with seasonal vegetables is to let them lead the meal rather than treating them as a side dish. Spring asparagus is one of those ingredients that hardly needs much to shine. Just a quick sauté is enough to keep it vibrant, tender, and full of flavour.
This tofu scramble is built around that idea. Instead of the classic turmeric and kala namak combination, this version takes a different direction with a quick homemade chermoula.
Although inspired by a tofu scramble, this dish feels more like a seasonal skillet meal. The asparagus and chermoula share the spotlight with the tofu, making it just as suitable for lunch or dinner as it is for breakfast.

A Quick Chermoula with Preserved Lemon
Chermoula is a vibrant herb sauce found across North Africa, with each region and family preparing it a little differently. Some versions lean more heavily on parsley, while others include more cilantro. Fresh lemon or preserved lemon may be used, and the spices vary from one kitchen to the next. Like many traditional recipes, it evolves with the people who make it.
For this recipe, I’ve added a handful of raisins, which bring just a touch of natural sweetness to balance the preserved lemon and warming spices. The result is a fragrant blend of fresh herbs, garlic, olive oil, toasted cumin and coriander, paprika, preserved lemon, and raisins. It pairs beautifully with the sweetness of spring asparagus.
Although it’s often used as a marinade for vegetables, tofu, fish or seafood, chermoula is just as delicious spooned over roasted vegetables, grain bowls, legumes, sandwiches or salads. Once you’ve made a batch, you’ll likely find plenty of ways to use the leftovers.

One of the things I especially enjoy about this recipe is using the chermoula in two ways. Most of it is cooked briefly in the pan, where the warmth softens the garlic and deepens the spices, while a little is reserved for serving, bringing a fresh burst of herbs and citrus to finish the dish.

My Tofu Scramble Method
While this dish is inspired by a tofu scramble, it isn’t intended to recreate scrambled eggs. If you’re looking for a very creamy, egg-style scramble, this recipe takes a different path.
Growing up eating tofu long before I ever associated it with plant-based alternatives, I came to appreciate it for its own flavour and texture. Rather than transforming it into something else, I prefer to let tofu be exactly what it is. In this recipe, it provides a satisfying bite that pairs beautifully with the tender asparagus and fragrant chermoula.

Rather than cooking all of the tofu at once, I brown half of it first before adding the remaining tofu. This creates little golden bites that contrast with the softer, creamier pieces added later. It’s a simple technique that adds another layer of texture without any extra effort.
To finish the dish, I stir in a light slurry of plant milk and tapioca starch. Rather than making the scramble heavy, it creates a silky coating that brings everything together while allowing the asparagus and chermoula to remain the stars of the dish.

Seasonal Variations and Serving Ideas
While asparagus makes this scramble especially fitting for spring, the recipe adapts beautifully throughout the year. Mushrooms, zucchini, broccoli, peas, green beans, spinach, kale or even roasted squash all pair wonderfully with the chermoula, making it easy to revisit as the seasons change.
Although often enjoyed for breakfast or brunch, this tofu scramble is equally satisfying for lunch or a quick weeknight dinner. Serve it on toasted bread, spoon it into warm flatbreads, tuck it into wraps, or pair it with roasted potatoes, sweet potatoes, rice, pasta or a crisp salad.

Asparagus Tofu Scramble with Quick Chermoula
A fresh spring-inspired tofu scramble featuring tender asparagus and a vibrant homemade chermoula made with herbs, preserved lemon and warming spices. Cooking the tofu in two stages creates contrasting textures, while a light plant milk and tapioca sauce brings everything together into a silky, flavourful skillet meal that's perfect for breakfast, brunch, lunch or a quick weeknight dinner.
Ingredients
Quick Chermoula
- 2 tbsp raisins
- 1 clove garlic
- 30 g cilantro (1 cup, loosely packed)
- 25 g parsley (1 cup, loosely packed)
- 2 tsp coriander seeds
- 1 tsp whole cumin seeds
- 1/2 tsp paprika
- Dash cayenne pepper
- 1 lemon, zest and juice
- 1 wedge preserved lemon (about 1/4 lemon)
- Salt, to taste
- Water, as needed for blending
- Olive oil (for blending and finishing, about 3-4 tbsp total)
Tofu Scramble
- 1 block firm tofu (about 350–400 g, depending on brand), pressed and crumbled
- 350 g asparagus (about 10–15 stalks, depending on size), cut into bite-size pieces
- 2–3 tbsp chermoula, plus more for serving
- 120 ml soy milk (1/2 cup), or other plant-based milk
- 1 tsp tapioca starch or cornstarch
- Salt, to taste
- Olive oil, for cooking (about 1–2 tbsp)
Instructions
- Soak the raisins in just enough hot water to cover them, and set aside to soften.
- Press the tofu using a towel and weight to remove excess moisture.
- Prep ingredients. Trim and slice asparagus. Slice garlic. Chop cilantro and parsley. Zest and juice lemon.
- Dry toast coriander and cumin seeds for about 1 minute until fragrant. Remove from heat.
- Make chermoula. Blend raisins with liquid, garlic, toasted spices, preserved lemon, olive oil, and a little soaking liquid until mostly smooth.Add herbs, paprika, cayenne, lemon juice and zest. Pulse, then blend until combined but still slightly textured. Adjust consistency with water and season. Set aside.
- Crumble the pressed tofu into small uneven pieces.
- Heat olive oil in a large skillet and cook half the tofu until lightly golden. Add the remaining tofu and cook for a few more minutes.
- Add the asparagus and sauté for 2–3 minutes until just tender but still vibrant.
- Push the mixture to one side of the pan and add a few spoonfuls of chermoula. Let it sizzle briefly, then stir through everything.
- Stir in the plant milk mixed with tapioca starch and cook for 1–2 minutes until the sauce thickens and lightly coats the tofu and vegetables.
- Taste and adjust seasoning if needed. Serve warm, with extra fresh chermoula on top if desired.
