These vegan English muffins are soft, rustic, and easy to make on the stove top with a short finish in the oven.
There are days when the craving isn’t just for food, but for a feeling.
The warmth of bread. The quiet satisfaction of making it from scratch.
And sometimes… finding a way to do it without heating the whole house.

A small Sunday debate
Sunday morning started with a simple question in my head:
scones… or sweet potato bread?
I had sweet potato waiting in the fridge, and it would have made sense to use it. But what I really wanted was bread. Proper bread. The kind that fills the kitchen with that familiar, comforting smell.
I’ve been easing off gluten lately, and I do feel lighter for it. But every now and then, I come back to it. Not out of habit, but out of love. There’s something about working dough with your hands that draws you in.
The only problem… it was warm.
And turning the oven on for a full hour felt like a bit too much for both me and Boyfriendlovlie.
I almost gave up and went for something simpler, like veggie pancakes.
Then it clicked.
English muffins.
Cooked mostly on the stove, with just a few minutes in the oven.
Minimal heat. Maximum reward.
And somehow, I realised I had never shared them here before.
So that settled it.

Why these vegan English muffins work
These vegan English muffins are made without dairy and can be cooked mostly on the stove, with just a short time in the oven. The dough comes together with a simple oat mixture, making them soft, light, and easy to prepare at home.
There’s something about them that feels both humble and special at the same time.
They’re soft, slightly chewy, with that rustic, homemade look. Not sweet like American muffins, but more like a light, puffy bread you can split open and fill however you like.
Breakfast, tea time, or even a quick lunch. These vegan English muffins are one of those recipes that fit into any part of the day without asking too much.

Traditionally, English muffins use milk. Here, it’s replaced with a simple oat mixture similar to making oat milk. I didn’t strain it, and that turned out to be one of those small details that actually improves the texture. It gives the crumb a little more body and a slightly fuller taste.
Ingredients for vegan English muffins
(No measurements here — see recipe card below for full quantities)
- Porridge oats
- Water
- Active dry yeast
- Maple syrup or sugar
- Coconut oil
- All-purpose flour
- Salt
- Cornmeal (for dusting)
Method
Start by blending oats with water until smooth. This becomes your oat milk, and there’s no need to strain it.
Warm it gently with a little maple syrup or sugar, just until it feels lukewarm. Not hot. This step matters because it’s what will wake up the yeast without damaging it.
Once the yeast is added, let it sit briefly, then mix in the coconut oil.

In a separate bowl, combine the flour and salt. Then make a well in the center and pour in the oatmilk mixture.
Bring everything together into a dough. It should feel soft and pliable. If needed, add a small amount of warm water, but not too much.

Knead the dough until it is smooth, then let it sit and rise until it is twice as big. This is where the dough transforms, becoming lighter and easier to work with.

Shape into rounds, place them onto a cornmeal-dusted tray, and let them rise once more until puffy.

From here, you have options.
You can cook them entirely in the oven, or do what I prefer, which is starting them in a pan.

That first contact with the pan gives them that golden, slightly crisp exterior. Then a short finish in the oven ensures the inside is fully cooked while staying soft.

Tips & Notes
Unstrained oat milk works beautifully
It might feel unconventional, but keeping the oat residue adds texture and depth.
Keep the temperature moderate
Whether warming the oat milk or cooking the muffins, avoid high heat. Slow and steady gives the best results.
Pan + oven gives the best texture
You get the golden crust from the pan and a soft, fully cooked interior from the oven.
Watch the dough, not the clock
Rising times will vary depending on the warmth of your space. Look for doubling in size rather than strict timing.
They freeze well
Let them cool completely, then freeze. Reheat in a toaster or oven when needed.

How do I store vegan English muffins?
They can be kept at room temperature for a day or frozen for longer storage.
English Muffin Recipe – Vegan
Soft, lightly chewy vegan English muffins with a rustic feel. Made with a simple oat mixture and cooked mostly on the stove for that golden, homemade finish.
Ingredients
- 3 tablespoons porridge oats (dry flakes)
- 250 ml water
- 1 tablespoon dry active yeast
- 1 tablespoon maple syrup (or sugar)
- 3 tablespoons coconut oil
- 3 cups all purpose flour (I use a 220 ml cup measurement)
- 1/2 teaspoon salt
- Cornmeal (for dusting)
Instructions
- Melt coconut oil (if not already liquid at room temperature). Do not heat, it should remain at room temperature. Set aside.
- Mix the oats with the water and blend for one minute on high. You can alternatively use a hand blender.
- Pour oat mixture in a saucepan, add maple syrup or sugar and heat gently until it is lukewarm (not hot).
- Sprinkle yeast on the warm oat milk. Whisk and mix. Let sit for a couple of minutes.
- Add the melted coconut oil and mix well.
- In a large bowl, add flour and salt. Mix well.
- Make a well in the center and pour in the oat milk mixture.
- Start to mix and knead. If the dough feels too dry, add 1 tablespoon of warm water at a time (it shouldn’t require more than 2 tablespoons extra).
- Continue to knead until the dough comes together.
- Knead for another 8 – 10 minutes, either in the bowl or on a board.
- Place dough in a greased bowl. Cover and let rise in a warm place until doubled in size.
- Divide into 2. Roll out to about 2 inches thickness. Cut out circles with a cutter and shape gently if needed.
- Place on a cornmeal-dusted tray, leaving space between each.
- Let rise again until doubled.
Cooking options
Pan + oven (recommended):
- Lightly grease a pan. Cook on low-medium heat for about 5 minutes on each side until golden.
Transfer to oven at 180°C (350°F) for 5 – 7 minutes.
Oven only:
- Cook on a griddle in the oven, about 5 minutes on each side.
Let cool slightly before serving.
Best enjoyed warm, with something simple… or filled with whatever you feel like that day.
