I know you must be wondering where I’ve been all this time! Very very busy! I’m now blogging from Dublin. Yes, it all happened so quickly! I’ve enrolled for a course and I’m now back to college! It feels a bit weird sometimes to be in a classroom again after 6 years working full-time. But I wanted a bit of change in my life!
The annoying thing at the moment is that I don’t have a computer at home and I am using internet cafes which is not very convenient. I hope to be able to buy a new computer soon so I can upload some more recipes for you soon!
I learnt yesterday that I am a second place of the September Cook’s Kitchen Contest I participated in last month! I am so thrilled!!!
A lot of people who have tried this recipe have found it difficult to obtain coconut milk powder.
Someone (anonymous) kindly let me know that the only coconut powder available in the U.S. (at Wilderness Family Naturals or King Arthur Flour) contains trace amounts of casein, a milk protein. And this won’t be suitable for vegans. I realised that this is not available everywhere in the world. I can’t find it in Dublin either at the moment.
So I suggest substituting the coconut milk powder and soy milk for thick coconut milk (the canned ones). I will try it soon and let you know how it works out.
