An incredibly tasty Peanut Butter Courgette/Zucchini Dip that can also be used as a dressing for cold pasta salads. {Peanut-free options with peanut butter alternatives}.
The second recipe in this series of easy recipes using peanut butter (part 1 and part 3) is a Peanut Butter Courgette or Zucchini Dip which again is really easy to make and so tasty. This recipe is very straightforward and all you need is a blender.
This dipping sauce keeps well in the fridge for a couple of days. You can serve it with vegetables as a snack or as a spread on sandwiches. I also like to use it as a dressing for cold pasta salads. It makes a nice and easy packed lunch or a light dinner.

Peanut Butter Courgette/Zucchini Dip
Ingredients (2 – 4 servings)
1 medium courgette/zucchini, peeled and chopped
Juice from 1/2 lemon
2 tablespoons peanut butter or peanut-free substitute (as suggested in part 1)
1/4 teaspoon paprika
1/2 teaspoon salt (or to taste)
1/4 teaspoon fresh ground black pepper
2 cloves garlic, chopped (optional)
Dash paprika (for garnish)
Chopped coriander leaves/cilantro (for garnish, optional)
Add all ingredients to a blender with a splash of water. Blend to a smooth puree.
Pour in a serving bowl. Garnish with chopped coriander leaves/cilantro and serve.
