This hoisin tofu and vegetables sheet pan dinner works with what you already have. A block of tofu, a handful of vegetables, and a deeply savoury glaze that coats everything as it bakes.
The oven does most of the work here. As the tofu roasts, it takes on a slightly crisp coating while staying tender inside. The vegetables soften and caramelise, picking up the sweet and salty notes of the sauce.
The hoisin-style glaze brings everything together. It has a balance of richness from molasses, depth from miso, a hint of heat, and the warmth of ginger and garlic. As it thickens in the oven, it clings to each piece, creating that glossy, flavourful finish.

What is Hoisin Sauce?
Hoisin sauce is a thick, dark, and richly flavoured sauce commonly used in Chinese cooking. The name “hoisin” comes from the Cantonese word hoi sin, meaning “seafood,” reflecting how the sauce was traditionally served alongside seafood dishes rather than its ingredients.
Despite its name, hoisin sauce does not contain seafood. It is typically made with fermented soybeans, sugar, vinegar, garlic, and spices, giving it a balance of sweet, salty, and umami notes. Its depth of flavour makes it very versatile, whether used as a glaze, a stir-fry sauce, or a dipping sauce.
In this recipe, the hoisin-style sauce follows that same balance, with molasses adding a deep sweetness, miso bringing savoury richness, and ginger and garlic lending warmth and brightness as it coats the tofu and vegetables.

Hoisin-Style Sauce for Roasting
This quick hoisin-style sauce comes together in one bowl and coats the tofu and vegetables as they roast, creating a glossy, savoury finish.
You’ll need:
- Soy sauce
- Molasses
- Vinegar (apple cider or rice)
- Miso paste or peanut butter
- Sriracha or hot sauce
- Black pepper
- Ginger and garlic
- Cornstarch
- Neutral oil and a little sesame oil
Mix everything until smooth, then use as directed in the recipe.

Variations
The sweetness in this sauce comes from molasses, which adds a deep, slightly earthy richness. Here, I’ve used fancy molasses, but you can also use a blend of 1 part blackstrap molasses to 3 parts fancy molasses for a slightly more pronounced flavour.
If molasses is not on hand, other options like maple syrup, agave, or even brown sugar can be used instead. The flavour will be lighter and less complex, but still balanced and enjoyable.

Hoisin Tofu and Vegetables Sheet Pan Dinner
An easy hoisin tofu and vegetables sheet pan dinner with a rich savoury glaze. Roasted until lightly caramelised, this simple vegan one-pan meal is perfect served over rice or enjoyed on its own.
Ingredients
- 350–400 g medium-firm or firm tofu
- 2 zucchinis
- 2 large carrots
- 1 Chinese eggplant
- 250 g (1 tub) cremini mushrooms
Hoisin Sauce
- ⅓ cup soy sauce
- ¼ cup molasses* (see notes for substitute
- 1 tbsp apple cider vinegar (or rice vinegar)
- ½ tbsp miso paste (or peanut butter)
- 1 tsp sriracha or hot sauce, more to taste
- 1 tsp ground black pepper
- 1 tbsp minced ginger
- 3 garlic cloves, minced
- 1½ tbsp cornstarch
- 1½ tbsp grapeseed oil, or other neutral oil
- ½ tbsp sesame seed oil, or more grapeseed oil
Instructions
- Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
- In a medium bowl, mix all the sauce ingredients until smooth.
- In a large bowl, add the vegetables. Pour in about half of the sauce and toss to coat well.
- Transfer the vegetables onto the baking tray and spread in a single layer.
- In the same bowl, gently toss the tofu with about half of the remaining sauce, being careful not to break the pieces.
- Place the tofu on the tray, spacing it out among the vegetables.
- Bake for 20 to 25 minutes, until the tofu is crisp on the edges and the vegetables are tender with some caramelised spots.
- Remove the vegetables from the oven.
- Turn the tofu, top with a little more sauce, and bake for another 5–10 minutes if desired.
- While the tray is in the oven, warm any remaining sauce gently on the stove until slightly thickened.
- Serve the roasted tofu and vegetables over boiled jasmine rice, with the warmed sauce spooned over.
Notes
Variations
Use other vegetables like broccoli, cauliflower, baby corn, other eggplant varieties, and tempeh.
Fancy molasses adds a deeper flavour. You can use a blend of 1 part blackstrap to 3 parts fancy molasses, or substitute with maple syrup, agave, or brown sugar for a lighter taste.
