Salad
- 200 g sweet potato noodles (glass noodles), cooked and rinsed in cold water
- 1 medium carrot, thinly sliced with a vegetable peeler
- Mixed bell peppers, thinly sliced
- 150 g frozen broad beans or edamame, blanched and drained
- 4–5 radishes, thinly sliced
- 70 g green beans, finely sliced
Asian-Style Fruit Butter Dressing
- 1 tablespoon fruit butter (apple butter works well)
- 1 teaspoon wasabi paste
- 1 tablespoon dark soy sauce (or homemade soy-free sauce substitute)
- ½ teaspoon fine chilli powder (or to taste)
- 1 tablespoon rice vinegar
- 1 tablespoon fruit syrup, maple syrup, or agave nectar
- Salt, to taste
Instructions
Prepare noodles and vegetables
- Cook the sweet potato noodles according to packet instructions.
- Rinse thoroughly under cold water to prevent sticking and drain well.
- Add the noodles and all vegetables to a large salad bowl.
- Toss gently to combine.
Make the dressing
- Add all ingredients to a small bowl.
- Whisk until smooth and well combined.
- Taste and adjust salt, sweetness, or heat as needed.
Pour the dressing over the salad just before serving and toss gently.
