In many vegan and vegetarian dishes, eggplant is often used as a meat replacement because of it’s texture and its ability to pick up flavours pretty nicely; it is such a versatile vegetable. However, if it’s not cooked well, it can be a pretty lackluster and tasteless dish.
But if cooked properly, eggplant is perhaps one of the tastiest vegetable to use in many vegan dishes.
As for the taste, eggplant picks up flavours pretty nicely. So, it’s really about the method of cooking with the right combination of spices and other ingredients.

You’ll find that older recipes on the blog used the term ‘aubergine’ instead of ‘eggplant’. I’ve been moving different countries since the creation of this blog. I’m originally more used to the term ‘aubergine’ which is the preferred term in Mauritius, the UK and Ireland. When I moved further west, in Northern America, I just decided to use the more widely used term: eggplant.
Interestingly, the term aubergine actually comes from the French word for eggplant. And while moving countries, I’ve come to learn about more words that are different within the English language depending on region. You might find it interesting to read about words that are different in the US and the UK. Coriander, for instance, is another term that took me a while to get used to saying ‘cilantro’, which is more widely used in the United States.
