Vegan Yogurt Cake or Cupcakes
Fluffy soft vegan yogurt cupcakes that are easy to make. Top with your favourite frosting. Can also be made in a cake mould instead of cupcakes.

plain or all-purpose flour
[3 cups]

dark soft brown sugar
[1½ cups]

baking powder

baking soda

melted vegan margarine
[¾ cup]

soy yogurt
[1 cup, 250 g], (I used a strawberry flavoured one, you may also use homemade yogurt, see notes)
Juice from ½ lime
or lemon

soy milk
[1/2 cup]

tablespoon
rice vinegar
[15 ml], or other vinegar like apple cider vinegar
Instructions
Preheat oven at 180 degrees Celsius (350F).
Place vinegar in soy milk and let stand for about 5 minutes (or until needed).
Mix flour and sugar. Add baking powder and baking soda. Mix thoroughly.
Add the lime juice to the yogurt. Stir well.
Pour the melted margarine onto the flour mixture.
Then add the yogurt. Stir and mix.
Add the soy milk mixture. Mix well.
Pour 2 - 3 spoonfuls of batter mix into cupcake tray lined with paper cups.
Bake for 30 minutes or until a toothpick inserted into the cake comes out clean.
