Ingredients
1/2cupquinoa
4 - 5cherry tomatoes
Handful beansprouts
Bunchparsleya few stems, finely chopped
Dressing:
1heaped teaspoonmiso pasteI used dark hatcho miso
1/2 orange
1teaspoonmaple syrup
Cracked dried chiliesoptional
Salt to taste
Iceberg lettuce leavesfor serving
Instructions
Boil quinoa according to package instructions. (All water should be absorbed). Let cool completely.
Cut tomatoes into halves or quarters.
Squeeze the juice out of the orange. Mix all ingredients of the dressing into a smooth paste.
Add dressing to quinoa along with all the other ingredients.
Leave to macerate for about 10 minutes before serving.
Notes
