Peanut Butter Courgette/Zucchini Dip

An incredibly tasty Peanut Butter Courgette/Zucchini Dip that can also be used as a dressing for cold pasta salads.

  • 1 medium courgette/zucchini peeled and chopped
  • Juice from 1/2 lemon
  • 2 tablespoons peanut butter or peanut-free substitute as suggested in part 1 (see notes)
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon fresh ground black pepper
  • 2 cloves garlic chopped (optional)
  • Dash paprika for garnish
  • Chopped coriander leaves/cilantro for garnish, optional


  • Add all ingredients to a blender with a splash of water. Blend to a smooth puree.
  • Pour in a serving bowl. Garnish with chopped coriander leaves/cilantro and serve.
