I rarely buy store-bought cookies these days. For one thing, I’m not always a fan of the oils that they use nor the amount of sugar. Homemade cookies are by far tastier and you know what you’ve put in there.
These coconut cookies can be made gluten free or with regular wheat flour or spelt flour, if you don’t need them to be gluten free. The gluten free flour blend that I like to use is the Measure for Measure (not a sponsored post, but an affiliate link) which already contains xanthan gum. So, make sure the gluten-free flour blend that you are using contains xanthan gum. I cannot exactly guide you about how much xanthan gum you need to add to your own flour blend as I’ve not tried it myself at this stage.
These coconut cookies call for a few ingredients. You could actually omit the baking powder but I like the airiness that it lends to the texture.
Making the cookies is actually pretty easy. All ingredients are mixed together into a dough, and then make small balls and flatten them. If you like your cookies more on the chewy side, bake them for a couple of minutes less, about 13 minutes.

Gluten-free coconut cookies that are so addictive. Enjoy with your favourite hot beverage.
Ingredients
- 120 g (1 cup) gluten-free flour blend (with xanthan gum, or all-purpose flour or spelt flour, if you don’t need gluten-free)
- 50 g (1/2 cup) coconut flakes
- 50 g (1/4 cup) sugar (coconut sugar, turbinado sugar)
- 1/2 teaspoon baking powder
- Pinch salt
- 3 tablespoons coconut oil
- 60 ml (1/4 cup) coconut milk or water
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Instructions
Mix the flour, coconut flakes, sugar, baking powder and salt in a large mixing bowl. Make a well in the centre, then add the coconut oil, coconut milk, vanilla and almond extracts.
Gradually mix all ingredients together until just combined into a dough. Do not knead this dough.
Make 12 equal balls and place on a lightly greased baking sheet. Then, flatten each ball with the back of a glass or measuring cup, or your fingers.
Bake for 13-15 minutes at 180C / 350F.
They will still be soft when you remove them from the oven.
Let them cool and they will crisp up.
